Why has my honey gone thick or grainy?

That's natural crystallisation — a sign it's genuinely raw.
If your honey crystallises:

• Remove the lid.
• Place the jar in a jug or bowl of warm (not boiling) water.
• Allow the honey to gently return to liquid form.
• Stir occasionally if required.
• Do not microwave the honey or expose it to excessive heat, as this may damage its natural enzymes, flavour and floral character.
